The ridiculous thing about Taiwan is this… you walk along the small streets and you are overwhelmed with crazy yummy looking places. You walk into one of these and you get knocked out with great tasting food everywhere. This little place I went to near where I live just hit it out of the ball park. Bone broth was crazy thick, almost pure white. Meat was thick and juicy. Egg perfectly cooked and the spicy version? Out of this world. Every ramen place has their own version of the noodles. This one was thick and slightly el dente. Everyone sat in one straight line in that narrow small restaurant quietly slurping their noodles…
